Born and raised in Toronto, Dudley Stubbs Jr. always had a thing for cooking. The youngest of seven, living in Etobicoke, his first job working at a snack bar, on the tourist-laden Centre Island. Over the years, he has worked in just about all levels of the food industry. Then, he turned his focus to home cooking.
STUBBS noticed that, when it came to Barbecue, Toronto was nowhere to be found. He also noticed a Barbecue love….Beer Chicken! STUBBS experimented with sauces for many years before getting a new inspiration. He looked toward the neighborhood he grew up in; Scarlettwood Court.
STUBBS came up with a seasoning series that he feels reflects the people at the time and the neighborhood. Just like the uniqueness found when you travel through Toronto, STUBBS made a barbecue sauce that’s just as unique. A uniqueness, he hoped to put this city on the barbecue map.
Based in a hearty, ginger-infused, roasted oatmeal stout, this is the beginnings of what he calls TORONTO STYLE barbecue sauce. Blended with traditional and non traditional seasonings, STUBBS has created a barbecue sauce that tastes like no other. STUBBS says….”I have every intention of making grillers in Toronto be recognized.”
